Who we are
Country Roads Catering is built around two people with different backgrounds that fit together naturally. Xav leads the food, Mike runs front of house, and together they shape events that feel personal, well organised, and genuinely enjoyable to be part of.
Xav is our chef and has spent 20 years working across restaurants, events, and fine dining. He brings the depth, discipline, and standards you want in the kitchen, but also the personality that gives Country Roads its edge: he loves trucks, country music, and his family, and that sense of character carries into the food we put in front of people.
Mike runs front of house and is usually the person making sure the client side stays clear, easy, and well handled. Before moving into the video games industry he worked as a sous chef, and he also has plenty of experience across bars, restaurants, and event work. Alongside service, he handles the online side, sales, and the wider startup-building mindset behind the business.
What kind of team we are
That mix is a big part of who we are. Country Roads is not a faceless catering company using stock packages and generic promises. It is a hands-on business built by people who understand both the food and the flow of an event, and who care about creating something that feels right for the people booking it.
Our style leans warm, guest-focused, and grounded in real hospitality. That can look like elegant plated food, relaxed sharing menus, grazing tables, or a more distinctive live-fire setup through Country Roads Smokeshack when the booking calls for something bolder, but the goal is always the same: great food and a well-run day that never feels awkward or overworked.
